Sweet Potato + Cacao Pudding


I have a serious sweet tooth at times, and I’ve heard that you can trace a chocolate craving back to a magnesium deficiency - so, CACAO. It’s super high in magnesium and helps you chill out, but it also turns basically any recipe into a chocolatey dessert.

I always seem to be left with a one sweet potato that goes unused and thought I would try a spin on a friends sweet potato brownies and make a sort of pudding / batter out of it… and of course, it came out BOMB.

Sweet Potato + Cacao Pudding

(but kinda more like a brownie batter)

Blend all of these together and serve with frozen berries, coconut cream and toppings!

1 Boiled Sweet Potato (I leave the skins on, but you can remove them!)

1/2 c Raw Cacao Powder

1/4 c Maple Syrup

1/2 c Coconut Cream (or alternative milk, but the creaminess is delicious!)

2 pitted Dates (or a fig if you have that!)
