Garlic Scape Pesto

What are Garlic Scapes? I didn’t know they were edible, or how to use them, but I decided to do some research after getting them in my weekly CSA pickup. Turns out they are edible and have a mild garlic flavor, perfect for pesto!

Any time I don’t know what to do with a veggie, I try to make a creative sauce or spread from it, so I’m way more likely to eat it (I snack way too much!).

Garlic Scape Pesto

Blend all ingredients together until a sauce forms, add more oil to thin it out, or leave out the cashews!

1/2 c soaked cashews (soak for at least 20 min, overnight for super creamy cashews!)


1/4 c Olive Oil *depends on the consistency you want


1/4 c Leeks *put in any veggie you’d like to bulk up the sauce, I needed to use my leftover leeks!

1 tsp Apple Cider Vinegar

*You can serve this on a cheese plate, as a dip, on pasta like a sauce, or as a rice topping and dressing!
