I love coconut flakes and tend to have them on hand for smoothie bowl or ice cream toppings - but sometimes they go unused and get awkward and crunchy stale.
Coconut butter is one of my favorites, but it’s often pretty expensive and unnecessary so I skip out. Now I make my own in the blender and keep it on hand for bagels, crackers, or just to eat by itself :)
with leftover coconut flakes
*blend it all together on pulse mode - it will take a couple minutes but patience is key!
1 c coconut flakes
1/4 c coconut oil (or any mild oil)
splash of maple syrup *optional
